    I LOVE fried rice, and my classic fried rice is already so easy, but I’m obsessed with this baked version! Dump everything into one baking dish, pop it in the oven, and dinner is served. It has all that savory fried rice flavor with less work!

    Ingredients for Baked Fried Rice

    • Rice: Long-grain white rice works best because it cooks up fluffy without becoming overly sticky.
    • Peas and Carrots: Frozen peas and carrots make prep easy, but you can use another combination of vegetables if you prefer.
    • Ham: Diced, precooked ham adds plenty of savory flavor. Chicken, Spam, or beef are also delicious options.
    • Eggs: Scrambled egg pieces are a must in fried rice! Most recipes leave this out, but I found the perfect way to add the eggs.

    How to Make Baked Fried Rice

    Baked fried rice is incredibly simple because everything cooks in one dish with very little hands-on work. The rice absorbs all that savory flavor as it bakes, then you add the eggs at the end for the classic fried rice finish. Try my air fryer fried rice next for another easy variation!

    1. Combine: Preheat the oven to 450°F, then spray a 9×13-inch baking dish with nonstick cooking spray. Add the rice, sesame oil, onion, garlic, peas and carrots, soy sauce, ham, and chicken broth to the baking dish. Stir well to combine.
    2. Bake: Cover the dish tightly with foil, then bake for 45 minutes.
    3. Add the Eggs: Remove from the oven, take off the foil, then increase the oven temperature to 475°F. Make a well in the center of the rice, then pour in the beaten eggs. Return to the oven and bake for 10 minutes, until the egg is cooked and the rice is lightly golden. Break up the cooked egg with a wooden spoon and gently stir it into the rice. Season with salt and pepper, then garnish with sliced green onions and serve.

    Ingredients

    • 2 cups long-grain white rice uncooked
    • 1 tablespoon sesame oil
    • ½ cup chopped white onion
    • 2 cloves minced garlic
    • 1 cup diced cooked ham
    • 1 cup frozen peas and carrots
    • 3 cups chicken broth
    • 3 tablespoons soy sauce
    • 2 large beaten eggs
    • salt and pepper to taste
    • ¼ cup sliced green onions for garnish

    Instructions

    • Preheat the oven to 450 degrees Fahrenheit. Spray a 13 x 9 x 2-inch baking dish with nonstick cooking spray.
    • Add 2 cups long-grain white rice, 1 tablespoon sesame oil, ½ cup chopped white onion, 2 cloves minced garlic, 1 cup frozen peas and carrots, 3 tablespoons soy sauce, 1 cup diced cooked ham, and 3 cups chicken broth to the prepared baking dish. Stir until well combined.
    • Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 45 minutes.
    • Remove the foil and increase the oven temperature to 475 degrees Fahrenheit. Make a well in the middle of the rice and pour in 2 large beaten eggs. Place the rice back in the oven for 10 minutes. Cook until the rice gets golden brown.
    • Using a wooden spoon, break up the cooked egg and gently mix it into the rice. Season with salt and pepper to taste, and garnish with ¼ cup sliced green onions.

    Notes

    Store and Reheat Leftovers

    • In the Refrigerator: Stored in an airtight container, it stays fresh for 5–7 days in the fridge.
    • To Reheat: The microwave works best! Heat portions of the rice for 1-2 minutes.
    • In the Freezer: Store in an airtight container in the freezer for up to 3 months. I like to freeze it in serving sizes so it’s easier to heat just the right portion.
