You only need a little bit.<\/li>\n<\/ul>\n<h4 class=\"wp-block-heading\" id=\"h-frying\"><strong>Frying:<\/strong><\/h4>\n<ul>\n<li><strong>Oil:<\/strong>\u00a0You will also need any high-heat oil like vegetable or peanut oil, used for shallow frying the samosas in.<\/li>\n<\/ul>\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-samosas\">How to Make Samosas<\/h2>\n<p>Homemade samosas take a bit of preparation and you need to keep a close eye on them as they cook, but it\u2019s SO worth it! Here is every step to making this Indian staple at home, broken up into 3 parts:<\/p>\n<h4 class=\"wp-block-heading\" id=\"h-make-the-dough\">Make the Dough<\/h4>\n<ol>\n<li><strong>Dough Mixture<\/strong>: To a bowl, whisk together the flour, thyme, and salt. Add the ghee to the four mixture and mix well with your fingers until all the ghee has been incorporated. You should have a shaggy dough that can hold its shape when pressed together.<\/li>\n<li><strong>Adjust Consistency<\/strong>: Add the water, 1 tablespoon at a time, kneading the dough as you add it until you have a fairly stiff dough, it shouldn\u2019t stick to your hands.<\/li>\n<li><strong>Rest<\/strong>: Cover the dough and let it rest for 30 minutes.<\/li>\n<\/ol>\n<h4 class=\"wp-block-heading\" id=\"h-make-the-filling\">Make the Filling<\/h4>\n<ol>\n<li><strong>Boil Potatoes<\/strong>: Peel the potatoes and cut them into 2 inch chunks then boil them until they are just fork tender, you don\u2019t want them to be too soft and mushy.<\/li>\n<li><strong>Drain<\/strong>: Drain the boiled potatoes then roughly chop or crumble them, do not mash them. Set the potatoes aside.<\/li>\n<li><strong>Heat Ghee With Spices:<\/strong> Heat the ghee in a medium size pan over medium high heat, add in the cumin seeds, coriander seeds, and fennel seeds and saute until they begin to sizzle.<\/li>\n<li><strong>Add Veggies<\/strong>: To the pan add in the ginger, green chilis, and peas. Saute everything for about 2 minutes.<\/li>\n<li><strong>Add in Remaining Ingredients<\/strong>: Lastly add in the lemon juice, turmeric, garam marsala, fennel powder, cilantro, salt to taste, and potatoes. Mix everything together well and saute for another 2 minutes.<\/li>\n<li><strong>Cool<\/strong>: Remove the filing from the pan and then set it aside to cool. Once the filling has cooled nearly to room temperature it is ready to assemble.<\/li>\n<\/ol>\n<h4 class=\"wp-block-heading\" id=\"h-assemble-samosas-fry\">Assemble Samosas \/ Fry<\/h4>\n<ol>\n<li><strong>Divide Dough<\/strong>: Divide the dough into 6 equal portions, form into balls, cover and let them rest about 10 minutes.<\/li>\n<li><strong>Roll Out<\/strong>: Roll each ball into flat disks, about 7 inches across. Press them between two pieces of parchment paper to roll flat.<\/li>\n<li><strong>Cover<\/strong>: Keep the flattened dough sections covered to avoid drying them out, work with one dough section at a time.<\/li>\n<li><strong>Create a Cone Shape<\/strong>: Cut the round in half, wet the flat edge of one half of the round and press the ends together to form a cone.<\/li>\n<li><strong>Fill and Seal<\/strong>: Fill the cone with about 2 tablespoons of the filling, gently pack it in. wet the inside edge of the open side and press it closed.<\/li>\n<li><strong>Repeat<\/strong>: Repeat with the other half of the round and then with the rest of the dough. This will yield 12 samosas.<\/li>\n<li><strong>Heat Oil<\/strong>: Heat 2 inches of oil in a large heavy bottom pan over medium heat, a toothpick or wooden skewer inserted into the oil should sizzle when the oil is hot enough.<\/li>\n<li><strong>Fry<\/strong>: Add enough samosas to the pan to leave some room between, you will need to work in batches. Fry the samosas for about 1 minute on each side, they should be golden and crispy but not develop dark brown spots.<\/li>\n<li><strong>Transfer to Plate<\/strong>: Remove the fried samosas from the pan, place them on a paper towel lined plate to allow any excess oil to be absorbed.<\/li>\n<li><strong>Enjoy<\/strong>: Once all the samosas are finished frying, serve them fresh with Mango Chutney or tamarind sauce.<\/li>\n<\/ol>\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1200\" alt=\"4-photo collage of the dough and filling being prepared.\" class=\"wp-image-241868\" title=\"Craving some crispy, golden goodness? Mix everything together well and saute for another 2 minutes.<\/p>\n<\/li>\n<li id=\"wprm-recipe-241674-step-1-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p>Remove the filing from the pan and set it aside to cool. Once the filling has cooled nearly to room temperature it is ready to assemble.<\/p>\n<\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-recipe-instruction-group\">\n<h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-none\">Assemble samosas<\/h4>\n<ul class=\"wprm-recipe-instructions\">\n<li id=\"wprm-recipe-241674-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p>Divide the dough into 6 equal portions, form into balls, cover and let them rest about 10 minutes.<\/p>\n<\/li>\n<li id=\"wprm-recipe-241674-step-2-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p>Roll each ball into flat disks, about 7 inches across. Press them between two pieces of parchment paper to roll flat.<\/p>\n<\/li>\n<li id=\"wprm-recipe-241674-step-2-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p>Keep the flattened dough sections covered to avoid drying them out, work with one dough section at a time.<\/p>\n<\/li>\n<li id=\"wprm-recipe-241674-step-2-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p>Cut the round in half, wet the flat edge of one half of the round and press the ends together to form a cone.<\/p>\n<\/li>\n<li id=\"wprm-recipe-241674-step-2-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p>Fill the cone with about 2 tablespoons of the filling, gently pack it in. wet the inside edge of the open side and press it closed.<\/p>\n<\/li>\n<li id=\"wprm-recipe-241674-step-2-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: none;\">\n<p>Repeat with the other half of the round and then with the rest of the dough.
