\u201cI don\u2019t need to receive any amusement or enjoyment,\u201d Carmen \u201cCarmy\u201d Barzotto said<\/a> as The Bear\u2019s<\/em> second season finale hurtled toward its conclusion. \u201cAnd I\u2019m completely fine with that.\u201d Locked in his restaurant\u2019s walk-in refrigerator, the chef, played by Jeremy Allen White<\/strong>, seemed poised to cut everything but work from his life. It was a self-flagellating tantrum even as Carmy’s restaurant enjoyed its triumphant friends and family opening, but according to White, Carmy will remain true to that vow of asceticism, as the show\u2019s third season will spend the majority of its time in the kitchen.<\/p>\n It\u2019s been a while since we\u2019ve seen our friends from the restaurant formerly known as The Original Beef of Chicagoland. (Or \u201cThe Berf<\/a>,” if you\u2019re feeling nasty.) FX dropped the acclaimed show\u2019s second season in one big Hulu binge on June 22<\/a>, then made us wait until November before confirming its return for season three<\/a>.\u00a0<\/p>\n The network announced that White, Ayo Edebiri<\/strong><\/a> (Carmy\u2019s fellow chef, Sydney Adamu), and Ebon Moss-Bachrach<\/strong> (the newly be-suited Richard \u201cRichie\u201d Jerimovich) will indeed return to the series, but has provided few other details so far. But on an episode of the Just for Variety<\/em> podcast<\/a> released Saturday, White offered an intriguing peek at what viewers can expect.<\/p>\n \u201cI think they\u2019ve written a couple scripts,\u201d White told interviewer Marc Malkin<\/strong> of the show, but \u201cI have not read any.\u201d\u00a0<\/p>\n \u201cI do know in January I\u2019m going to spend a fair amount of time getting together with some chefs,\u201d White said. \u201cAnd I know that I\u2019m going to start putting together [the titular restaurant\u2019s] menu with different chefs and cooking and just trying to get prepared to do more of that stuff on camera.\u201d\u00a0<\/p>\n Much of the second season dealt with the nuts and bolts work of remodeling a restaurant, along with personal side plots fleshing out other characters\u2019 lives, the dysfunction of the Barzotto family, and Carmy\u2019s attempts to escape that dysfunction with girlfriend Claire (Molly Gordon<\/strong>). White acknowledges that \u201cfor the second season, so much of it was about putting the restaurant together, so there wasn\u2019t much cooking,\u201d a state of affairs that might have caused White-like Carmy, per his refrigerated rant\u2014to lose his fine dining edge.<\/p>\n \u201cWe all did a lot of preparation before the first season,\u201d White told Malkin, a rigorous training he also detailed to Vanity Fair<\/em><\/a> last year. \u201cI went to culinary school, and I spent a lot of time in restaurants and stuff.\u201d<\/p>\n \u201cBut now, in the third season, I think we\u2019re going to go back to that functioning kitchen atmosphere that we had in the first,\u201d White said. Some might pause at his use of \u201cfunctioning\u201d given his character\u2019s opening-night meltdown, Sydney\u2019s back alley vomit session, and Josh\u2019s (Alex Moffat<\/strong>) service-shift crack session<\/a>, but, sure, I see what he means.<\/p>\n FX has yet to say when the third season will drop on Hulu (or Star+ in Latin America and Disney+ everywhere outside the US), but promises a premiere in 2024.
