Fortunately, there are some very basic guidelines that will help you choose a good mix of cheeses and their accompaniments. And if you still feel like you\u2019re in over your head, remember: It\u2019s just stuff on a plate.<\/p>\n<\/div>\n<\/div>\n<div>\n<div data-testid=\"base-html\" class=\"Html\">\n<p>If there\u2019s one idea to remember above all others, it\u2019s to <strong>choose award-winning cheeses<\/strong>. Before we even get into fancy ideas like \u201cumami profile balance\u201d and \u201cfractional proportions,\u201d know that if the cheeses are good, your guests will be happy. When you get home from the store, unwrap anything in plastic, wrap it in parchment paper (this keeps them from getting that plastic aroma), then rewrap in plastic (this keeps it from drying out).<\/p>\n<\/div>\n<\/div>\n<div>\n<div data-testid=\"base-html\" class=\"Html\">\n<p>When it\u2019s time to serve, <strong>take your cheeses out of the fridge 1.5\u20132 hours before you serve them<\/strong> so they come to room temperature \u2014\u00a0that\u2019s where they taste best. Keep them wrapped until showtime to keep them from drying out.
