When you pick up a bunch of scallions from the grocery store, you\u2019ll find that they\u2019re delicately packed into bundles and stacked into piles. But because of their thin skin, they don\u2019t last long without proper care. Don\u2019t just throw them in the back of your fridge and toss a package of deli meat, more produce, and a bottle of sparkling water on top. Treat them with some care, dang it!<\/p>\n<p>Think of scallions like flowers. They need moisture to stay fresh and are best when they\u2019re upright. So we\u2019re going to <a href=\"https:\/\/food52.com\/blog\/23905-flower-care-tips-spring-floral-society\" target=\"_blank\" rel=\"noopener\">make a bouquet of them<\/a>: Grab a mason jar or tall glass and submerge the scallions&#8217; roots in an inch or two of water. Leave the green tops out of the water while keeping the white parts generously damp. From here, you can store them on a windowsill (because who doesn\u2019t need a little bit of sunshine), or in the refrigerator on the bottom shelf.<\/p>\n<p>If you\u2019ve experienced one too many spills using this method with other types of produce (been there, done that) and want to forgo it altogether, there\u2019s another trick that will keep scallions fresh for days. Wrap the scallions gently in a damp paper towel, tuck them into an airtight zip-top bag, and store them in the <a href=\"https:\/\/food52.com\/blog\/25957-fridge-storage-containers-ideas\" target=\"_blank\" rel=\"noopener\">crisper drawer of your refrigerator<\/a>. And always, always, always label and date the bag or container that you\u2019re storing scallions in so that you know exactly what they are and when to toss them out (if they start to wilt, that\u2019s a good indication that they\u2019ve seen better days).<\/p>\n<p>To prepare scallions for <a href=\"https:\/\/food52.com\/blog\/12450-how-to-make-a-superlative-stir-fry-hint-grab-your-wok\" target=\"_blank\" rel=\"noopener\">stir-frys<\/a> or <a href=\"https:\/\/food52.com\/recipes\/83285-skillet-scallion-recipe\" target=\"_blank\" rel=\"noopener\">saut\u00e9s<\/a>, cut off the root (compost it to <a href=\"https:\/\/food52.com\/blog\/23990-how-to-start-composting-compost-bin-at-home\" target=\"_blank\" rel=\"noopener\">avoid food waste<\/a>!) before cooking.
