Tea cakes may be frozen after they are baked. Line them up on a parchment-lined baking sheet and freeze for 2-3 hours, until the cakes are frozen through. Transfer to an airtight container. They will keep in the freezer for up to 3 months. Thaw at room temperature for 3-4 hours.
