If you\u2019ve spent time on our site, you\u2019ve probably read at least one of his pieces\u2014like the <a href=\"https:\/\/food52.com\/blog\/28316-infinite-desserts-valhalla\" target=\"_blank\" rel=\"noopener\">pastry chef who makes \u201cinfinite\u201d desserts<\/a>, the TikTok star <a href=\"https:\/\/food52.com\/blog\/28311-kyle-lee-alaskan-salmon-company-profile\" target=\"_blank\" rel=\"noopener\">disrupting the salmon industry<\/a>, or his taste-test of <a href=\"https:\/\/food52.com\/drinks\/non-alcoholic\/28301-best-non-alcoholic-beers\" target=\"_blank\" rel=\"noopener\">31 nonalcoholic beers<\/a>. We asked the line cook-turned-writer to tell us the five things always in his kitchen\u2014here\u2019s what he said.<\/p>\n<hr class=\"divider--ornament\"\/>\n<h3>1. Homemade Pickled Jalape\u00f1os<\/h3>\n<p>To make this super-versatile condiment, Paul boils equal parts white vinegar and water, adds a big pinch of salt, then pours the brine over sliced jalape\u00f1os and some smashed garlic cloves. Once the whole thing cools to room temp, just store it in the fridge. Don\u2019t forget about the brine: It\u2019s a great marinade for <a href=\"https:\/\/food52.com\/recipes\/chicken?tag=test-kitchen-approved&amp;o=rating\" target=\"_blank\" rel=\"noopener\">chicken<\/a> thighs and other proteins.<\/p>\n<h3>2. Salami<\/h3>\n<p>Right now, Paul has a package of sliced salami from Trader Joe\u2019s in his fridge\u2014but any kind will do, he says. \u201cSalami and scrambled eggs is the best breakfast ever,\u201d says Paul. It\u2019s also ideal for snacking and can easily add a ton of flavor to <a href=\"https:\/\/food52.com\/recipes\/pasta?tag=test-kitchen-approved&amp;o=rating\" target=\"_blank\" rel=\"noopener\">pastas<\/a>, <a href=\"https:\/\/food52.com\/recipes\/search?q=pizza&amp;tag=test-kitchen-approved&amp;o=relevance\" target=\"_blank\" rel=\"noopener\">pizzas<\/a>, and other dinners.<\/p>\n<h3>3. Old Bay Seasoning<\/h3>\n<p>\u201cGotta have Old Bay,\u201d says Paul. \u201cI\u2019ve had this everywhere I\u2019ve ever lived. It\u2019s the first thing I\u2019ll buy when I move into a new apartment.\u201d It\u2019s great on potatoes, fish, chicken\u2014\u201cjust about anything.\u201d<\/p>\n<h3>4. Grey Poupon Dijon Mustard<\/h3>\n<p>Paul uses this mustard for pretty much everything\u2014in salad dressings, added to tuna salad, spread on sandwiches\u2014because it\u2019s super consistent and high quality. \u201cI grew up with Grey Poupon. I trust it.\u201d<\/p>\n<h3>5.
