Maybe it\u2019s for saut\u00e9eing kale, <a href=\"https:\/\/food52.com\/recipes\/54401-diane-morgan-s-classic-mashed-potatoes\" target=\"_blank\" rel=\"noopener\">mashing potatoes<\/a>, or <a href=\"https:\/\/food52.com\/recipes\/36211-lady-pups-s-magic-15-second-creamy-scrambled-eggs\" target=\"_blank\" rel=\"noopener\">scrambling eggs<\/a>. But, most often, it\u2019s for baking.<\/p>\n<p>I don\u2019t need to tell you that unsalted butter is the default for baked goods, from <a href=\"https:\/\/food52.com\/recipes\/25558-chocolate-chip-cookies\" target=\"_blank\" rel=\"noopener\">chocolate chip cookies<\/a> to <a href=\"https:\/\/food52.com\/recipes\/84768-best-pound-cake-recipe\" target=\"_blank\" rel=\"noopener\">pound cakes<\/a> to <a href=\"https:\/\/food52.com\/recipes\/24928-all-buttah-pie-dough\" target=\"_blank\" rel=\"noopener\">pie crusts<\/a>. Using unsalted butter allows you to control the amount of salt in your baked goods (especially since the salt content in salted butter varies, so it\u2019s hard to know exactly how much you\u2019re adding). The more nitty-gritty\u2014and less talked about\u2014distinction is American-style versus European-style.<\/p>\n<p>In <a href=\"https:\/\/amzn.to\/3LIOhl7\" target=\"_blank\" rel=\"noopener\"><em>On Food and Cooking<\/em><\/a>, Harold McGee defines the latter as \u201ca cultured butter with a fat content higher than the standard 80 percent.\u201d Depending on the brand, expect European butter to contain anywhere from 82 to 86 percent. In the United States, American-made butter must contain at least 80 percent fat. It may not sound like a huge difference, but just think of whole versus nonfat milk\u2014a few percentage points makes a world of difference when it comes to flavor. Irish and European-style butter are beloved for being richer and creamier because they contain more milk and have a lower water content; this also means that they\u2019re easier to bring to room temperature, which is ideal when you\u2019re in a pinch and need softened butter stat.<\/p>\n<p>Of course, baking a muffin is not drinking a glass of milk. Fat is flavor, yes, but it\u2019s also one of the components in a fine-tuned formula. Safe to say that there are dozens of butter brands to pick from at the grocery store, but which one is the best for your recipe? It\u2019s easy to think that swapping in higher-fat, European-style butter in any baking recipe would lead to more flavorful pie crusts, brown butter blondies, chocolate chip cookies, you name it. (And, as European-style butters have become more popular in the U.S., a lot of online resources have indicated as much.) But that sort of swap can unravel a recipe.<\/p>\n<p>As award-winning baker Stella Parks noted a few years ago:<\/p>\n<p>              <center><br \/>\n<strong>Friendly reminder: switching to European style butter in an American recipe isn\u2019t an upgrade, it\u2019s a fundamental alteration of the formula.<\/strong><br \/>\n<\/center><\/p>\n<p>Similarly, <a href=\"https:\/\/blog.kingarthurflour.com\/2016\/08\/18\/butter-baking\/\" target=\"_blank\" rel=\"noopener\">King Arthur<\/a> conducted a few American-style versus European-style baking experiments\u2014and found that recipes with American-style butter did <em>not<\/em> appreciate a European-style substitute. Shortbread turned out greasier. And scones: flatter, \u201csad, and slumped.\u201d<\/p>\n<p>All of which is o say, if you\u2019re baking a recipe developed for American-style butter, American-style butter is your best bet. Not all recipes will specify which type of butter to use, but if you\u2019re cooking a baking recipe from a U.S.-based recipe developer, it\u2019s safe to assume that they used American-style and not European-style butter.<\/p>\n<p><strong>But which American-style butter is the best to buy for baking? We did a taste test of five popular brands of butter to find out which is the best.<\/strong><\/p>\n<ul>\n<li>All of the butters we tested were unsalted and uncultured, with cream and natural flavors as the only allowed ingredients. Cultured butter has a tangier taste\u2014it\u2019s delicious, but not the basic butter flavor we were after.<\/li>\n<li>Prices are based on <a href=\"https:\/\/www.amazon.com\/AmazonFresh\" target=\"_blank\" rel=\"noopener\">AmazonFresh<\/a>, <a href=\"https:\/\/www.freshdirect.com\" target=\"_blank\" rel=\"noopener\">FreshDirect<\/a>, and stores in the New York City area. Therefore, these prices may fluctuate based on where you live.<\/li>\n<li>Because pie crust is <em>all<\/em> about the butter, we selected this recipe as the baked good for the experiment. Most found it \u201cnot very buttery,\u201d or \u201cnot so butter-forward\u201d with a sad face drawn in for emphasis. Multiple people called it \u201cbland.\u201d Though, for what it\u2019s worth, one lone wolf said: \u201cThis is #1.\u201d Do with that what you will.<\/p>\n<h4>4. <a href=\"https:\/\/www.amazon.com\/365-Whole-Foods-Market-Unsalted\/dp\/B0BJ3B4MKN\/ref=sr_1_2_f3_0o_wf\" target=\"_blank\" rel=\"noopener\">365<\/a> ($5.69\/pound)<\/h4>\n<p>The Whole Foods store brand 365 ranked quite close to Land O\u2019 Lakes. Several people described its flavor as \u201csavory,\u201d with one taste tester comparing it to \u201ca butter and lard pie,\u201d which, by the way, \u201cis a compliment!\u201d A couple people found the pie crust result to be \u201coily\u201d\u2014we can all agree this is not the goal of butter. Therefore, we\u2019d probably pass on buying 365 butter in the future.<\/p>\n<h4>3. <a href=\"https:\/\/www.freshdirect.com\/dairy\/dai\/dai_butte\/dai_butte_block\/sc\/dai_butte_unsa\/p\/dai_pid_2005070\" target=\"_blank\" rel=\"noopener\">Breakstone\u2019s<\/a> ($6.49\/pound)<\/h4>\n<p>\u201cButtery but blah\u201d sums up the wishy-washy feedback to Breakstone\u2019s. Some complimented its \u201cnice,\u201d \u201cyum,\u201d and \u201clight yet rich\u201d flavor. Others said it was \u201cless flavorful\u201d and \u201creminds me of lard, but not in a way I\u2019m mad at? I think.\u201d<\/p>\n<h4>2. <a href=\"https:\/\/www.freshdirect.com\/dairy\/dai\/dai_butte\/dai_butte_block\/sc\/dai_butte_unsa\/p\/dai_pid_2004943\" target=\"_blank\" rel=\"noopener\">Cabot<\/a> ($5.79\/pound)<\/h4>\n<p>Cabot came in strong as one of the best butters for baking: \u201cButteriest,\u201d \u201cvery strong butter flavor,\u201d \u201cexcellent flavor,\u201d \u201ccan def taste the butter,\u201d and \u201cooh nice flavor\u201d were among its many compliments. Meanwhile, one taste tester declared that it \u201ctastes like fish.\u201d Perhaps this single low ranking is what helped the winner take home the gold&#8230;<\/p>\n<h4>1. <a href=\"https:\/\/www.traderjoes.com\/home\/products\/pdp\/butter-quarters-unsalted-006253\" target=\"_blank\" rel=\"noopener\">Trader Joe\u2019s<\/a> ($3.99\/pound)<\/h4>\n<p>\u201cWhoa,\u201d said one person. And the rest of the group agreed, describing Trader Joe\u2019s store brand as: \u201cextra buttery,\u201d \u201csweet buttery flavor,\u201d and \u201cnice butter flavor,\u201d with more than one declaring it \u201cvery rich.\u201d We were also pretty pleased that the winner just so happened to be the cheapest of the bunch.
