Two months into my first cooking job\u2014and somewhere in the middle of what I thought was an impressive shift\u2014I tossed a towel over my shoulder.<\/p>\n<p>The chef noticed, looked me in the eyes, and plainly said, \u201cYou know this isn\u2019t your movie, right?\u201d<\/p>\n<p>He then outlined the harms and uselessness of the shoulder towel: It dirties your uniform, the towel will drop if you suddenly move, it\u2019s easier to grab something from your hip than your shoulder, and\u2014as he put it\u2014it\u2019s \u201c[insert expletive] embarrassing.\u201d<\/p>\n<p>A towel hasn\u2019t gone on my shoulder since.<\/p>\n<p>Instead, every towel has remained clasped to my hip\u2014a practice you can observe in nearly any well-regarded, fine dining kitchen throughout the world. According to former <a href=\"https:\/\/www.theworlds50best.com\/awards\/best-of-the-best\/eleven-madison-park.html\" target=\"_blank\" rel=\"noopener\">Eleven Madison Park<\/a> line cook\u2014and current Food52 Test Kitchen manager\u2014Alison Buford, you should keep two towels on your hip. \u201cI was taught that your front towel is for wiping your hands and surfaces and to have a second towel tucked in [your] back apron strings so you always have a dry towel at the ready to handle hot things,\u201d she said. You would never catch her draping a towel over her shoulder.<\/p>\n<p>The disdain for shoulder towels extends to the internet. In a <a href=\"https:\/\/www.reddit.com\/r\/KitchenConfidential\/comments\/2gd9zg\/towels_on_your_shoulder\/\" target=\"_blank\" rel=\"noopener\">Reddit thread<\/a> debating the acceptability of shoulder towels in professional kitchens, the top comment made it clear:<br \/>\n\u201cYou aren\u2019t in the kitchen to wax a car, your towel should be in your hands, on your apron or on a table\/surface, never your shoulder.\u201d Another user summed it up with just seven words: \u201cDisgusting. Dirty towel, dirty jacket, dirty chef.\u201d<\/p>\n<p>Despite consensus among professional cooks\u2014who call this cloth a side towel, after all\u2014the shoulder towel persists, most visibly in films and TV. It\u2019s the kind of insider detail that a movie or television show <em>should<\/em> get right\u2014and when they don\u2019t, it\u2019s an obvious tell that someone didn\u2019t do their homework.<\/p>\n<p>With this in mind, let\u2019s towel-track some notable kitchen-focused shows and movies and compare it to  their Rotten Tomatoes scores. My thesis: The best films are the ones where the towels stay by a chef\u2019s side.<\/p>\n<h2>The Bear (2023)<\/h2>\n<p>              <iframe loading=\"lazy\" title=\"The Bear s2 ep9 -  The Omelette\" width=\"696\" height=\"392\" src=\"https:\/\/www.youtube.com\/embed\/VMc__7a-434?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" allowfullscreen><\/iframe><\/p>\n<p>As if they were working right alongside Alison, the cooks in <em>The Bear<\/em> keep two towels on their waist\u2014and it stays that way throughout both of the show\u2019s first two seasons. Known as one of the more realistic portrayals of restaurant work, much of <em>The Bear\u2019s<\/em> accuracy can be attributed to input from the show\u2019s culinary producer <a href=\"https:\/\/variety.com\/2023\/tv\/news\/the-bear-culinary-producer-courtney-storer-1235658485\/\" target=\"_blank\" rel=\"noopener\">Courtney Storer<\/a> and actor, producer, and professional chef <a href=\"https:\/\/variety.com\/2023\/tv\/news\/matty-matheson-chef-the-bear-courtney-storer-vice-1235664207\/\" target=\"_blank\" rel=\"noopener\">Matty Matheson<\/a>. <em>Rotten Tomatoes: <a href=\"https:\/\/www.rottentomatoes.com\/tv\/the_bear\" target=\"_blank\" rel=\"noopener\">99%<\/a>.<\/em><\/p>\n<h2>The Menu (2022)<\/h2>\n<p>              <iframe loading=\"lazy\" title=\"Margot Orders A Normal Cheeseburger | The Menu (2022) Movie Scene\" width=\"696\" height=\"392\" src=\"https:\/\/www.youtube.com\/embed\/4bjDrg5q7ZY?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" allowfullscreen><\/iframe><\/p>\n<p>In its searing critique of elite restaurant culture, food media, and people that write articles over-explaining the importance of side towels (uh oh), <em>The Menu<\/em> needed to nail the visual details of fine dining to stick its satirical landing. Spoiler: It does so very, very well\u2014and when you observe the line cooks working for Chef Slowik (played by Ralph Fiennes), you\u2019ll notice their side towels are just that: hip height. <em>Rotten Tomatoes: <a href=\"https:\/\/www.rottentomatoes.com\/m\/the_menu\" target=\"_blank\" rel=\"noopener\">88%<\/a><\/em><\/p>\n<h2>Burnt (2015)<\/h2>\n<p>              <iframe loading=\"lazy\" title=\"Burnt Movie - Adams Cooking Scenes\" width=\"696\" height=\"392\" src=\"https:\/\/www.youtube.com\/embed\/HJaWyfFQbEU?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" allowfullscreen><\/iframe><\/p>\n<p>Bradley Cooper\u2019s character in <em>Burnt<\/em> is an amalgamation of culinary cliches (i.e. he\u2019s toxic, but talented!). Despite learning his craft at \u201cthe best restaurant in Paris\u201d and being on the verge of getting his third (fictional) Michelin star, Chef Bradley routinely dons a shoulder towel. <em>Rotten Tomatoes: <a href=\"https:\/\/www.rottentomatoes.com\/m\/burnt\" target=\"_blank\" rel=\"noopener\">28%<\/a><\/em><\/p>\n<h2>Ratatouille (2007)<\/h2>\n<p>              <iframe loading=\"lazy\" title=\"Ratatouille   Special Order\" width=\"696\" height=\"392\" src=\"https:\/\/www.youtube.com\/embed\/1DmPd3or1EM?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" allowfullscreen><\/iframe><\/p>\n<p>The attention to detail in <em>Ratatouille<\/em> is consistent with the rest of Pixar\u2019s critically acclaimed films: exhaustive. From the succinct explanation of the French brigade system to the chefs emphasis on cleanliness and organization, there\u2019s little wrong with this animated masterpiece\u2014and there\u2019s no shoulder towels to be found in the restaurant\u2019s kitchen. <em>Rotten Tomatoes: <a href=\"https:\/\/www.rottentomatoes.com\/m\/ratatouille\" target=\"_blank\" rel=\"noopener\">96%<\/a><\/em><\/p>\n<h2>Kitchen Confidential (2005)<\/h2>\n<p>              <iframe loading=\"lazy\" title=\"Bradley Cooper &amp; Kitchen Confidential intro\" width=\"696\" height=\"392\" src=\"https:\/\/www.youtube.com\/embed\/3uXv0anYsMU?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" allowfullscreen><\/iframe><\/p>\n<p>An adaptation of <a href=\"https:\/\/www.amazon.com\/Kitchen-Confidential-Updated-Adventures-Underbelly\/dp\/0060899220\" target=\"_blank\" rel=\"noopener\">Anthony Bourdain\u2019s popular memoir<\/a>, <em>Kitchen Confidential<\/em>\u2014which coincidentally also stars Bradley Cooper\u2014ran on FOX for one season in 2005. As <em>The Ringer\u2019s<\/em> Mara Reinstein puts it, this show \u201c<a href=\"https:\/\/www.theringer.com\/tv\/2023\/6\/22\/23768671\/kitchen-confidential-flop-anthony-bourdain-bradley-cooper-the-bear\" target=\"_blank\" rel=\"noopener\">was <em>The Bear<\/em> before <em>The Bear<\/em><\/a>.\u201d The only problems?
