She ended up gaining 20 pounds quickly after the finale to reach her \u201cperfect weight.\u201d<\/p>\n In an essay written for Today <\/a><\/em>nearly a year after her win, Rachel wrote, \u201cI knew if I worked hard every day and prepared my meals to fuel my body, I could do it.
