These cheesy quesadillas are packed with flavor first thing in the morning. The added protein from the eggs and bacon will keep you satisfied and are a great start to your day. These breakfast quesadillas are a great way to load on healthy veggies.<\/p>\n<p>Quesadillas are so versatile and you can make them just how you like them! Sometimes I sneak in spinach and peppers for my kids.  As long as they get to dip their breakfast in salsa and sour cream, they don\u2019t seem to care! You can also serve these with\u00a0<a href=\"https:\/\/therecipecritic.com\/guacamole\/\" data-wpel-link=\"internal\" target=\"_self\" rel=\"noopener\">homemade guacamole,<\/a>\u00a0<a href=\"https:\/\/therecipecritic.com\/restaurant-style-salsa-2\/\" data-wpel-link=\"internal\" target=\"_self\" rel=\"noopener\">salsa<\/a>, or my easy\u00a0<a href=\"https:\/\/therecipecritic.com\/mexican-rice\/\" data-wpel-link=\"internal\" target=\"_self\" rel=\"noopener\">Mexican rice<\/a>\u00a0if you really want to fill their bellies before school.<\/p>\n<h2 id=\"h-ingredients-needed-for-quesadillas\">Ingredients Needed For Quesadillas<\/h2>\n<p>With a few simple ingredients! You most likely already have them on hand, so breakfast quesadillas can happen first thing in the morning! You\u2019ll always want to have these ingredients on hand so you can make them!\u00a0Your family will love you when they wake up to these.<\/p>\n<ul>\n<li><strong>Bacon: <\/strong>Bacon for breakfast is so yummy! You can use sausage or turkey bacon if you prefer.<\/li>\n<li><strong>Eggs:<\/strong> Eggs for scrambling.<\/li>\n<li><strong>Milk:<\/strong> A little bit of milk will make the eggs creamy. I use whole milk but you can use any milk.<\/li>\n<li><strong>Salt:<\/strong> Flavor to taste.<\/li>\n<li><strong>Pepper:<\/strong> I like using cracked black pepper.<\/li>\n<li><strong>Cumin:<\/strong> I love the addition of this Mexican spice.<\/li>\n<li><strong>Garlic Powder:<\/strong> Adds great flavor to the eggs.<\/li>\n<li><strong>Onion Powder:<\/strong> Adds a subtle onion flavor without being overpowering.<\/li>\n<li><strong>Flour Tortillas:<\/strong> I love using flour tortillas but corn is great too!<\/li>\n<li><strong>Shredded Cheese: <\/strong>Mexican cheese blend is best with all the Mexican flavors in the quesadillas.<\/li>\n<li><strong>Salsa:<\/strong> For serving on the side.<\/li>\n<li><strong>Sour Cream:<\/strong> For serving on the side.<\/li>\n<li><strong>Avocado:<\/strong> Sliced for serving.<\/li>\n<\/ul>\n<h2 id=\"h-let-s-make-breakfast-quesadillas\">Let\u2019s Make Breakfast Quesadillas<\/h2>\n<p>These breakfast quesadillas are really very easy to make. You can get the whole family involved by giving everyone an assignment. While someone cooks the bacon, somone else can scramble the eggs. Then let everyone else get all the toppings ready! A great weekend breakfast for all to help and enjoy.<\/p>\n<ol>\n<li><strong>Cook the Bacon:<\/strong> Over medium-high heat, cook the bacon in a large <a href=\"https:\/\/www.target.com\/p\/cuisinart-classic-12-34-stainless-steel-non-stick-skillet-8322-30ns\/-\/A-79750772#lnk=sametab\" data-wpel-link=\"external\" target=\"_blank\" rel=\"noopener\">skillet <\/a>until just crispy. Remove the bacon from the pan and set it on a plate of paper towels to cool. Reserve about \u00bc cup of bacon fat and discard the rest. Once the bacon has cooled, chop or crumble it into little pieces.<\/li>\n<li><strong>Scramble the Eggs:<\/strong> In a medium bowl, whisk together the eggs, milk, and seasonings. Heat your bacon fat in the skillet over medium heat and scramble your eggs. Remove the cooked eggs from the skillet and set aside.<\/li>\n<li><strong>Assemble the Quesadilla: <\/strong>Lower the heat to medium-low and add a tortilla to the skillet. Spread \u00bc cup of cheese onto the tortilla, about \u00bc cup scrambled eggs on top of the cheese, and 2 tablespoons of cooked and crumbled bacon. Spread an additional \u00bc cup of cheese over the bacon and eggs and place a tortilla on top.<\/li>\n<li><strong>Cook the Quesadilla:<\/strong> Cook the assembled quesadilla on one side for about 3-4 minutes covered to trap the heat in and melt the cheese. Rewarming them in the air fryer doesn\u2019t take long at all, but you can rewarm the leftovers in the oven as well. Follow the directions below to enjoy leftover quesadillas.<\/p>\n<ul>\n<li><strong>In the Refrigerator:\u00a0<\/strong>Place leftovers in an airtight container or sealable bag. Store in the fridge for up to 3 days. I like to separate them with paper towels to help them not get soggy.<\/li>\n<li><strong>In the<\/strong>\u00a0<strong>Freezer:\u00a0<\/strong>Wrap the quesadillas individually in parchment paper then place them in a freezer-safe Ziploc bag or sealable container. Make sure to lay them flat in the freezer. Store in the freezer for up to 3 months.<\/li>\n<li><strong>To<\/strong>\u00a0<strong>Reheat:\u00a0<\/strong>You can reheat them in the microwave but the tortilla will become soft. To keep the crisp outside, reheat the quesadilla in the air fryer or the oven.
