But maybe more importantly, boiling brings some of the potatoes\u2019 gelatinized starches to the surface, so they get even crispier in the oven.&#8221;<\/p>\n<h3>7. <a href=\"https:\/\/food52.com\/recipes\/34915-nancy-silverton-s-bran-muffins\" target=\"_blank\" rel=\"noopener\">Nancy Silverton&#8217;s Bran Muffins<\/a><br \/>\n<\/h3>\n<p>Homemade muffins are always very nice to have at brunch, and these are the best. As Kristen tells it, &#8220;Silverton was uninspired by bran muffin recipes that called for processed bran cereals and lots of sugar. So she built a recipe based on unprocessed bran, which is pretty easy to find at health food stores and online. She toasts the bran briefly to develop the flavor, but otherwise stirs it straight in\u2014so there really is no reason for using cereal, other than the fact that cereal marketers are good at their jobs.&#8221;<\/p>\n<h3>8. <a href=\"https:\/\/food52.com\/recipes\/55040-canal-house-s-pimenton-fried-eggs\" target=\"_blank\" rel=\"noopener\">Canal House&#8217;s Piment\u00f3n Fried Eggs<\/a><br \/>\n<\/h3>\n<p>&#8220;Fried egg?&#8221; is the question my mom asks whenever we sit to a home-cooked dinner. It translates to: I love you. (Also, in our house, fried eggs seemed always to round out a meal and make it more complete.) Jean&#8217;s eggs are crispy at the edges, just like these Canal House ones, only without the Genius trick of spicing your frying oil. If you&#8217;re like my mother, then you want a perfectly cooked steak just as much as a plate of crispy fried eggs (anyway, there&#8217;s a reason those two are a match made in heaven). Kristen swears by this particular method from <a href=\"https:\/\/www.seriouseats.com\/the-food-lab\" target=\"_blank\" rel=\"noopener\"><em>The Food Lab<\/em><\/a>&#8216;s J. Kenji L\u00f3pez-Alt, where you&#8217;re encouraged to flip your steaks often. &#8220;It leads to a more evenly cooked steak,&#8221; she says.<\/p>\n<h3>10. <a href=\"https:\/\/food52.com\/recipes\/76172-violet-bakery-s-cinnamon-buns\" target=\"_blank\" rel=\"noopener\">Violet Bakery&#8217;s Cinnamon Buns<\/a><br \/>\n<\/h3>\n<p>My mom loves anything cinnamon-flavored, and nothing fits the bill better than a warm, fresh-out-of-the-oven morning bun. The thing about homemade cinnamon rolls, however, is that they usually take <em>forever<\/em>. It\u2019s a constant oscillation of maximal saltiness from the oil-cured olives, to minimal harshness from the sweet olive-scented cake, which gets its crisp chewiness from a scant 1\/4 cup of ground almonds and a preheated cast-iron skillet. In this case, it&#8217;s all three: As it&#8217;s a &#8220;bright spot at the end of a dense, salty meal,&#8221; Kristen says, Roberta&#8217;s green herb-flecked cake will make you rethink the way we cook with parsley and mint. Even better where there&#8217;s a little whimsy involved in the spread. As Kristen tells it, this French toast casserole from Chrissy Teigen &#8220;is spilling over with glee,&#8221; thanks to the toasty, salty, buttery Frosted Flake topping, which &#8220;you will want to palm up like trail mix.&#8221; In case you&#8217;re still not convinced of its genius, a final note from Teigen herself: &#8220;I am so proud of this dish I could cry.&#8221;<\/p>\n<h3>14. <a href=\"https:\/\/food52.com\/recipes\/19368-michael-ruhlman-s-rosemary-brined-buttermilk-fried-chicken\" target=\"_blank\" rel=\"noopener\">Michael Ruhlman&#8217;s Rosemary-Brined, Buttermilk Fried Chicken<\/a><br \/>\n<\/h3>\n<p>My mom <em>adores<\/em> fried chicken\u2014but then again, whose mom doesn&#8217;t? &#8220;This is a fried chicken recipe you just can&#8217;t mess up,&#8221; Kristen promises. &#8220;Ruhlman uses a speedy rosemary lemon brine, which is key to keeping the chicken flavorful and moist. Because of this (and its ultra-crispy buttermilk battered crust), the chicken will hold well in a warm oven for a couple of hours before guests arrive.&#8221;<\/p>\n<h3>15. <a href=\"https:\/\/food52.com\/recipes\/27433-dan-leader-s-4-hour-baguette\" target=\"_blank\" rel=\"noopener\">Dan Leader&#8217;s 4-Hour Baguette<\/a><br \/>\n<\/h3>\n<p>Homemade bread says two things: 1) home and 2) &#8220;you&#8217;re worth it.&#8221; I love this approachable, Genius baguette recipe because even <em>I<\/em> (a self-proclaimed bad baker) can make it. &#8220;It will only take you 4 hours of intermittent attention,&#8221; Kristen promises, &#8220;and won&#8217;t require a starter nor any equipment you don&#8217;t already own\u2014and it will rival your favorite bakery&#8217;s.&#8221;<\/p>\n<h3>16. <a href=\"https:\/\/food52.com\/recipes\/32139-andrew-feinberg-s-slow-baked-broccoli-frittata\" target=\"_blank\" rel=\"noopener\">Andrew Feinberg&#8217;s Slow-Baked Broccoli Frittata<\/a><br \/>\n<\/h3>\n<p>Finally, a not-dry, not-hard frittata for your wildest brunch dreams. (You&#8217;re welcome.) &#8220;Instead of cooking the eggs quickly in a hot oven,&#8221; chef Andrew Feinberg says, &#8220;I cook them slowly in a low oven and the result is a very custardy and creamy texture that traditional frittata do not have.&#8221;<\/p>\n<h3>17. <a href=\"https:\/\/food52.com\/recipes\/75772-nancy-silverton-s-egg-salad-with-bagna-cauda-toast\" target=\"_blank\" rel=\"noopener\">Nancy Silverton\u2019s Egg Salad With Bagna Cauda Toast<\/a><br \/>\n<\/h3>\n<p>So.
