Chop up your veggies, cook them down, add everything to the pot! Let it simmer and soak in all the flavor. I like to make double batch so I have plenty for quick lunches during the week. <\/p>\n<ol class=\"wp-block-list is-style-fancy\">\n<li><strong>Cook Veggies:<\/strong> Heat the olive oil on the stovetop in a <a href=\"https:\/\/www.target.com\/p\/cuisinart-8qt-stainless-steel-stock-pot-with-cover-silver\/-\/A-88223277#lnk=sametab\" data-wpel-link=\"external\" target=\"_blank\" rel=\"noopener\">large pot<\/a> over medium-high heat. Add the onion, celery, and carrots to the pot and cook, stirring occasionally, until the vegetables are tender, about 5 minutes.<\/li>\n<li><strong>Stir<\/strong>: Add the garlic and tomato paste to the pot and stir until the garlic is fragrant, about 1 minute.\u00a0<\/li>\n<li><strong>Simmer<\/strong>: Add the cannellini beans, <a href=\"https:\/\/therecipecritic.com\/chicken-broth\/\" data-wpel-link=\"internal\" target=\"_self\" rel=\"noopener\">broth<\/a>, vinegar, <a href=\"https:\/\/therecipecritic.com\/italian-seasoning\/\" data-wpel-link=\"internal\" target=\"_self\" rel=\"noopener\">Italian seasoning<\/a>, pepper flakes, and salt and black pepper to taste.\u00a0Stir everything together, then bring the soup to a gentle boil. Reduce the heat to low and simmer for 5-8 minutes.\u00a0<\/li>\n<li><strong>Serve:<\/strong> Add the spinach to the soup and stir to incorporate.
