    Meet The Matcha Brookies Taking Over the Internet

    There’s no doubt that America is currently obsessed with matcha. In desserts, savory dishes, and lattes, green tea is finally getting its flowers. However, there are a few recipes that truly stand out from the rest in terms of internet virality. In this case, I have not been able to escape matcha brookies—which are exactly what they sound likematcha blondie dough combined with chocolate chip cookie dough. The original viral video and recipe is made by Ivy Woolenberg, otherwise known as @bakedwithlovebyivy on social media, and we were lucky enough to host her in the Food52 test kitchen to make her signature dessert.

    Here’s how we made them:

    We were following Ivy’s recipe, which you can find here for exact measurements. First, we made the matcha dough by melting butter with white chocolate chips. To that, we added sugar and two eggs, then combined the dry ingredients (including the sifted matcha). We folded this lightly. This matcha dough can come out a little soft, so Ivy’s hack to solve this problem is setting it in the freezer while working on the next part.

    The chocolate chip cookie dough was simple: cream the butter and sugar together, then add an egg or two, then dry ingredients, and finally the chocolate chips. This is a basic cookie dough recipe that we didn’t even need a hand mixer for. This dough comes out firmer and easier to handle than the matcha component. Ivy made a note that sometimes she’ll start by just adding the yolk of the egg instead of the whole thing, then add some egg white if the dough is looking dry.

    Then, we got ready for the fun part. Ivy’s signature kitchen utensil: the ice cream scoop. What makes these matcha brookies so special and beloved is the way the cookie dough and matcha dough blend and swirl together rather than being stacked on top of each other. We alternated scooping matcha dough and chocolate chip cookie dough until our 8×8 pan was filled. It was looking gorgeous. I’ll admit the scooping process is a bit tedious and might make more dishes to clean, but the end result is worth it.

    After some time in the oven, we took the matcha brookies out and let them sit for a while. Ivy says that she often lets them cool overnight in the fridge to make sure she can get the perfect cut of swirled matcha brookies. We were on a tighter timeline, but we made it work.
    The end result was a gorgeous, gooey, green-and-chocolate dessert. I couldn’t resist eating it before it cooled, but it was worth the burnt tongue. I totally understand why this is one of Ivy’s most popular recipes, and why they’re always on my social media feed.
